Nilagang (boiled) Veggie Meat with Sweet Corn

Living away from home is not that easy. I have to exert more effort t in preparing healthy food to keep my body fit. Last Friday, I was craving to eat some green leafy soup. Something that really fits for a rainy day. We all know that “Nilagang baka or manok“ is known to warm s in rainy days. To my eagerness to make a healthy soup, I made this “experimental cooking” that is somehow similar to “Nilagang chicken or beef”. I called it “Nilagang (boiled) Veggie Meat with Sweet Corn”. Sounds funny, but yes you may use “Veggie Meat” as a replacement for “beef and chicken meat”.

But before we proceed to the recipe , let me share this passage to you which I have read in the book entitled “Counsels on Diet and Foods”

Good for 2-3 servings

Ingredients:

  • 1 Green Onions (sliced)
  • 1 bulb of red or white Onions (sliced)
  • 6 Cloves of Garlic (peeled)
  • 1 Ginger (peeled)
  • 1 big Sweet Corn(cut into small)
  • 3-4 medium Potatoes (sliced)
  • 2 small Gabi (sliced)
  • 2-3 pieces of Carrots (sliced)
  • 2 pieces of cooked banana (Saba) optional
  • 1/4 of the whole cabbage
  • 2 bunches of Pechay or Bok Choy
  • Salt and pepper to taste
  • 10-12 pieces of Veggie Meat

Procedure:

Veggie Meat:

  1. In a small pot, pour out some water then add the 10-12 pieces of veggie meat. Bring to boil for about 2-3 minutes. Do not overcook. (Drain the veggie meat using a strainer).image
  2. In a small bowl, place the cooked veggie meat, and marinate it with a little of sesame oil, ground pepper and a pinch of salt. (Set aside)
  3. In another large pot, pour out some water covering about 2 inches from the bottom of the pot. Add ginger, garlic, white/red onions and salt and bring to boil. Reduce the heat to medium. Cover the pot and continue to boil for 5-10 minutes.
  4. You may or not remove the onions, ginger and garlic from the boiling mixture. But I prefer not to remove it to add flavors and colors to it.
  5. After that , add the cut sweet corns to the boiling water for about 10 minutes or until the sweet corns become tender. Next, add some carrots, gabi and potatoes . Cook for 10 minutes or wait until all these ingredients become tender. (Do not overcook). It would be better if the vegetables are half cooked.20160205_044910.jpg
  6.  Put the Veggie Meat in the mixture. and simmer it for 5 minutes.
  7.  Lastly, add the Bok Choy or Pechay and Cabbage. Sprinkle it with salt and pepper..
  8. Cover and turn the heat off. Let the pot stay covered for 2 to 5 minutes to cook the vegetables.
  9. Transfer to a serving bowl.10. Season with additional salt and basil leaves, if desired. Garnish with green onions on top. Serve. Eat and PRAY!
